
Banana Cue is one of the most popular street foods in the Philippines. It is made out of a deep fried banana coated with caramelized brown sugar served in a barbecue stick. This is a staple in the Philippines, and is mostly consumed as a mid-afternoon snack. Considered as one of the all-time best selling street food, Banana cues can easily be spotted around the streets of Cebu and in other places within the Philippines, as well. This is usually sold along with turon (deep fried wrapped banana with sweet jack fruit), kamotecue (deep-fried skewed sweet potatoes with brown sugar), pilipit, and bicho-bicho.
Bananas used are the key elements of this dish hence “saba” bananas (cardaba bananas) are the only option if you want to make one as the use of normal bananas would not yield the same result and will break down when deep fried.
It is usually skewered on a bamboo stick, and sold on the streets. The skewer stick is just for ease of serving and eating, but is not cooked on the skewer.
How to Prepare
The banana cue doesn’t literally mean that it is served and prepared like barbecues. In fact, it is entirely different. The whole process does not involve the bananas being cooked above a super hot charcoal and allowing it to continuously rest and flipped a few times per minute. Here’s a few tips and insight on how to prepare such delicious snacks:
Ingredients
- 6 pieces Saba Banana
- 2 cups brown sugar
- 4 cups cooking oil
Instructions
- Heat a cooking pot then pour-in cooking oil.
- When the oil becomes hot, deep fry the bananas for 2 minutes.
- Gradually put in the brown sugar.
- Adjust the heat to medium-low and continue cooking until the melted brown sugar coats the bananas.
- Remove the cooked bananas one by one and immediately skewer using a bamboo skewer.
- Let cool and then serve.
